I’m generally a recipe finder and 70% follower – sometimes leaving stuff out and putting stuff in depending on how I feel and what’s in the fridge – but I’m not normally great at making up recipes. I surprised myself with this fiesta when a girlfriend came over for dinner, so I wanted to share it with you all!

2 cups rocket
1 cup sliced red cabbage (massaged if you feel so inclined)
10 (ish) cherry tomatoes, halved
¼ cup walnuts
Tbsp flax seeds
¼ cup spring onions
Dressing: ¼ cup extra virgin olive oil, ⅛ cup apple cider vinegar and 1 tsp dijon mustard shaken up in a jar

Perfect with a veggie lasagne, frittata or on it’s own with a few falafels!
